A plot that belonged to Maxime's grandfather, that the young winemaker has been cultivating since the 2020 vintage. 100% Pinot Noir from 60-year-old vines, planted at the foot of the 1er Cru Les Mitans, on clay soils with soft limestone scree. Manual harvest. Vinification: 30% of whole bunches, 26 days of vatting, pressing, 15 months of aging in 228-litre Burgundy barrels, with 30% new oak, the rest of the barrels have seen two to three wines. Bottled at the Estate without fining or filtration, sensible use of sulfites.

Maxime Dubuet-Boillot
Maxime Dubuet-Boillot, child of the 1989 vintage and grandson of a farmer from Corberon and a vigneron from Volnay, first turned his back on his family vineyards before finally returning to them for good. Maxime’s career began not in wine but auto racing, working as a mechanic for The 24 Hours of Le Mans. He pursued that passion for 10 years before heeding the call of his winegrowing roots....
