A beautiful Volnay that needs to lay down in your cellar, still fiery, with notes of cherry, blackcurrant, tulip, oak. Palate: tight tannic structure, without astringency, long aromatic, slightly mineral. Decanting is recommended in its youth.

Pinot Noir from 60-year-old vines planted at the foot of the slopes, on the Climats Les Grands Champs and Les Combes, which belonged to Maxime's grandfather, recovered for the 2020 vintage. Soils: clay-limestone, brown clay and small white pebbles. Hand-harvested. Vinification: 40% whole bunches, maceration with regular punching of the cap and daily pumping over, pressing, 12 months of aging in 228-liter Burgundy barrels, with 30% new oak. Bottled without fining or filtration.
Maxime Dubuet-Boillot
Maxime Dubuet-Boillot, child of the 1989 vintage and grandson of a farmer from Corberon and a vigneron from Volnay, first turned his back on his family vineyards before finally returning to them for good. Maxime’s career began not in wine but auto racing, working as a mechanic for The 24 Hours of Le Mans. He pursued that passion for 10 years before heeding the call of his winegrowing roots....
