100% Gamay from 37-year-old vines planted in the lower part of Volnay, on the Climats La Grande Corvée and Le Mont Poulain, which show clay-loam soils. Harvested by hand. Vinification: direct pressing of the whole bunches, cold settling for 36 hours, followed by 6 months of aging in stainless steel vats, during which Maxime "feeds" the wine with Pinot Noir lees to give it the desired character and aromatics. Bottled at the Domaine without fining or filtration, just a micro-dose of sulfur.
Maxime Dubuet-Boillot
Maxime Dubuet-Boillot, child of the 1989 vintage and grandson of a farmer from Corberon and a vigneron from Volnay, first turned his back on his family vineyards before finally returning to them for good. Maxime’s career began not in wine but auto racing, working as a mechanic for The 24 Hours of Le Mans. He pursued that passion for 10 years before heeding the call of his winegrowing roots....
