A nose with notes of white flowers, honey, brioche, and hazelnut... The palate is rich and creamy, yet balanced by lovely acidity, and with a long finish. A generic Burgundy that is anything but generic! Worth decanting. Yume Utai is the translation of "Chanterêves" in Japanese.

Chardonnay made with purchased grapes, from vines in sustainable farming, two thirds of which are planted in Maranges, and the remaining third in Les Pierres Dorées in the south of the Beaujolais (Bajocian limestone soils rich in fossils, comparable to those of Chassagne-Montrachet). Manual harvest, fermentation and aging in barrels that have seen several wines, for 12 months, with a single, one thorough stirring of the lees during the summer, then 6 months of aging in stainless steel vats. No fining nor filtration, just a micro-dose of sulphur.
