100% Pinot Noir from purchased grapes, organically farmed vines planted on a Premier Cru site extending from a Grand Cru of Corton, on clay-limestone soils. The grapes were harvested by hand. Vinification: whole clusters in wooden vats, with wetting of the marc using a watering can (no pumping), and daily punching down by foot, no temperature control. Pressing, then aged in old casks for 13 months on fine lees, blending of the casks and then a second winter of ageing in stainless steel tanks. Unfined, unfiltered, just a micro-dose of sulphur.
