100% Pinot Noir from vines grown biodynamically, primarily from the Champforey parcel. Vinification: 30% whole bunches, 12 days of maceration in vats, zero additives. Matured for 12 months in 3-10 year-old barrels, blended then matured an additional month in vats, with a light filtration at the end. Just a tiny pinch of sulphur added at bottling.
Sylvain Pataille
Sylvain Pataille is the winemaker at the helm of his eponymous estate in Marsannay, Burgundy, and quite possibly the revelation of recent years in the sector.
