An opulent nose, with notes of yellow fruits, lemon, elderflower... Palate: exceptional! What Sylviain has produced here with his Aligotés is a revelation! Rich, mineral, intense, with beautiful energy!
100% Aligoté, from grapes purchased from friends for whom Sylvain manages the vines from the beginning of the growth cycle until harvest. The vines are 60 years old. Direct, manual pressing for 5-6 hours of whole bunches in a very old vertical press. Moved to barrels mid-fermentation, matured 11 months in barrels on its lees, then matured an additional month in vats, with a light filtration at the end. Just a tiny pinch of sulphur added at bottling.
