100% Pinot Noir, from several parcels in the appellation on mid-slope, with 50-year-old vines on average grown biodynamically. Natural vinification without additives: 2/3 of whole bunches, 3 weeks of maceration in vats. 12 months of aging in 3-10-year-old barrels, blended then matured an additional 6 months in vats, with a light filtration at the end. Just a tiny pinch of sulphur added at bottling.
Sylvain Pataille
Sylvain Pataille is the winemaker at the helm of his eponymous estate in Marsannay, Burgundy, and quite possibly the revelation of recent years in the sector. A native of the village, he studied at the Beaune wine school and graduated as an oenologist in Bordeaux. Sylvain started from scratch more than 25 years ago...
