Chardonnay, from young vines planted in 2010 on the parcel known as En Méchalot – a parcel classified for making Rosé Marsannay, vinified here as a white wine, thus Sylvain gives up the Marsannay appellation to make a white Burgundy. Direct and long pressing for 5-6 hours of the whole bunches in a very old vertical press. Moved to barrels mid-fermentation, matured 24 months in barrels on its lees, with 15% new oak, blended then matured an additional month in vats, with a light filtration at the end. Just a tiny pinch of sulphur added at bottling.
