100% Aligoté, made from purchased grapes in organic conversion since 2019, grown on a gently sloping limestone plateau in Saint-Bris-le-Vineux. Hand-harvested on September 18th, 2023, in 20kg crates. Natural winemaking: direct press, gentle settling, fermentation and 7 months of aging in used barrels. Light filtration and bottled in Spring 2024 with minimal sulfur. Total SO2: 15mg/L.
