The goal here was to interpret the terroir as faithfully as possible — and it’s a total win. A Sauvignon with citrus notes and a subtle herbal edge, showing fine texture and a salty, mouthwatering finish shaped by delicate and fine bitters.

100% Sauvignon, from a 2-hectare plot planted in 2011 in Saint-Bris-le-Vineux on clay-limestone soils. Grapes purchased from vines in organic conversion since 2019. Manual harvest at optimal ripeness in 20kg crates. Direct press in a pneumatic press, gentle settling, alcoholic and malolactic fermentations in barrels that have seen several wines, 10 months of élevage in the same barrels. Bottled with a light filtration and a touch of sulfur.
