Blending of 70% Pinot Noir and 30% Chardonnay from old vines farmed organically and planted on the southern terroir of Fontaine-Denis-Nuisy. Manual harvest, vinification: 30% as a maceration rosé, the rest by direct pressing, fermentation and ageing 30% in oak barrels. Tirage and maturation on lees and on laths in bottle, disgorged in May 2024. Dosage at 4 grams per litre, it’s an extra-brut.
