A Grand Cru Champagne based on the 2021 vintage, supplemented with a few reserve wines. A Blanc de Blancs—100% Chardonnay—from vines planted in Chouilly, to the northwest and southeast of the village, at the bottom of the hillsides, on soils with exposed chalk. The grapes were harvested by hand. Direct pressing, vinification, and 8 months of aging in stainless steel tanks. Bottling, aging on slats, and disgorgement in April 2025. An extra-brut Champagne, with a dosage of 3 grams per liter.
Rémi, Olivier et Jérôme Legras
Rémi, Olivier and Jérôme Legras run the Legras & Haas house, in Chouilly, Grand Cru of the Côte des Blancs. Their father François, learning the vine from his own father from the age of 16, carries four centuries of the village's winegrowing tradition.
