Complex, evolving nose carried by notes of pear, lemon and white flowers, with a mineral framework and a hint of herbs. Concentrated and silky on the palate, with a fresh, mineral and saline finish.
100% Vermentino from vines grown biodynamically, certified by demeter, and planted on blue schist soils with South/Southeast exposure. Harvested by hand. Vinification: total de-stemming, 12 hours of maceration of the berries, pneumatic pressing, fermentation in temperature-controlled stainless-steel vats, 6 months of aging in concrete vats, on fine lees, with regular stirring of the lees. Bottled without fining, light filtration.
