A blend of 70% Sciacarello and 30% Grenache Noir from organically farmed vines planted on gravelly soils with rounded pebbles, facing southeast. 70% of the vines are 40 years old, and 30% are younger vines, 10 years old. Harvested at night, the grapes are destemmed, then undergo a week of cold maceration at 3 to 5 degrees Celsius, followed by temperature-controlled fermentation in stainless steel tanks, pneumatic pressing, and 6 months of aging in concrete tanks, on fine lees, with regular stirring of the lees. Bottled after a light filtration.
