This is already a serious white, between the glouglou and the estate's whites. There may be a hint of reduction and some gas, but decant it and the magic happens: notes of lemon, white flowers, brioche... The palate is Burgundian in style, with beautiful volume and a mineral, salty finish.

100% Chardonnay from old vines planted in 1986 on Bajocian limestone, organically farmed. The grapes were harvested by hand and naturally vinified: direct pressing, fermentation in barrels that have seen several wines, and aged for four years in these same barrels, on the lees, without intervention except for some topping-ups. Bottled without fining or filtration, with no added sulfites.
Jean François Ganevat
Jean-François Ganevat represents the 14th generation of vignerons of his family in Rotalier, in the south of Jura. After years working as the cellar master of Jean-Marc Morey in Chassagne-Montrachet, he took over his family’s estate in 1998.
