100% Chenin, made in the Montlouis-sur-Loire appellation, from 80-year-old vines farmed biodynamically on poor, well-drained soils facing south. Harvested by hand on October 10th 2018, the grapes were picked during a fourth pass through the vineyard, after developing divine noble rot, then sorted at tables on site in the vineyard and in the cellar. Vinification: pressing, followed by alcoholic fermentation in vats for half and in barrels for the rest over 8 months, all without racking to better preserve the cuvée’s full spectrum of aromatics.
