100% Chenin, made in the Montlouis-sur-Loire appellation, from 80-year-old vines farmed biodynamically on poor, well-drained soils facing south. Vinification: pressing, followed by alcoholic fermentation in vats for half and in barrels for the rest over 8 months, all without racking to better preserve the cuvée’s full spectrum of aromatics.
