Domaine du Bouchot

100% Sauvignon from 45-year-old vines farmed biodynamically and planted on a small plot of Portland limestone soil. The grapes are harvested by hand and vinified naturally, with 6 months of maceration in barrels that have seen several wines, gentle pressing, then 6 months of maturation in the same barrels. Bottled at the estate in October 2021 after a light filtration, with just a microdose of sulphur to protect the wine, for a total SO2 of 35 mg/l.
