A blend of 40% Chenin, 30% Ondenc and 30% Muscadelle from vines grown biodynamically on clay-limestone soils. Manual harvest of all three grape varieties on the same day, total destemming of the entire harvest, followed by 3 to 5 months of maceration of the berries in clay amphorae. After pressing, the wine is aged for 6 months in these same clay amphorae. Bottled without fining or filtration, with no added sulphites.
