A blend of Merlot and Malbec, from vines farmed organically and planted on clay-limestone soil. The grapes were harvested by hand, with yields of 40 hl/ha. Vinification is done naturally: carbonic maceration for ten days, followed by devatting, destemming and crushing of the grapes, which are then placed back in vats to finish fermentation – without cap punch downs or pumping over. Gentle pressing, 8 months of maturation in terracotta amphorae. Neither fined nor filtered, and no added sulphites.
