100% Cabernet Franc from biodynamically farmed vines planted on clay-rich, iron-laced soils beneath a layer of flint. Hand-harvested. Natural vinification: carbonic maceration of the whole clusters for around 10 days, then gently crushed and macerated a few more days, followed by a very slow, soft pressing. Aged for two years in amphorae ranging from 200 to 600 liters. Bottled with no fining, no filtration, and no added sulfites.
