40% Chenin, 30% Sémillon, and 30% Muscadelle from vines farmed biodynamically and planted on shallow clay-limestone soils. Manual and late harvest of botrytized grapes, followed by direct pressing in a pneumatic press. In the cellar: indigenous yeasts, natural vinification in stainless steel tanks. When the desired balance of alcohol and residual sugar is reached, the wine is filtered and immediately bottled. Therefore, no ageing, which allows for a very low addition of SO2 without risk of refermentation.
