100% Aligoté from centuries-old vines grown organically and planted on clay-limestone soils. Manual harvesting, natural vinification of course, direct pressing, two years of aging in barrels. Bottled without fining, filtration or any addition of sulphites, for a prolonged aging of the wine in bottle at the Estate's cellar.
