Complex and intoxicating nose, always evolving, with notes of pear, minerals, with a slight but sure brioche-like side, as well as honey and citrus. We could stay immersed in it for a long time! Round and fresh palate, saline finish. Decanting is highly recommended.

70% Macabeu, 30% Carignan Blanc and Grenache Gris, from organically farmed vines planted on alluvial terraces in the lieu-dit La Made, near Narbonne. Vinification: gentle, slow direct pressing followed by a light 12-hour settling. Fermentation starts in stainless steel tanks, then the wine is transferred to 5th to 9th-use barrels to complete alcoholic fermentation. Daily stirring of the lees for one month. Aged 10 months on lees in barrel. Unfined, unfiltered, with just a micro-dose of sulfur before bottling. Total SO2 < 20 mg/l.
