100% Carignan from very old vines cultivated organically and planted on Anne-Laure Gieules’ estate, as indicated on the back label. The grapes were harvested by hand by Henri and his team. Natural vinification: this is a saignée rosé, meaning the juice was drawn from the bottom of a tank intended for producing a red wine (in this case, the Ciel à Perdre cuvée). Aged in old barrels that have seen several wines, for 30 months. Bottled without fining or filtration, with just a micro-dose of sulfur.

Henri Chauvet, child of the 1987 vintage, is a new winemaker based in Boudes in Auvergne. After quitting his job in insurance banks, he got his viticulture and oenology diploma, and trained alongside Jérôme Bressy in Rasteau, then with the legendary Thierry Allemand in Cornas.
