Probably our favorite cuvée from Maylis, with its complex nose with notes of sesame, lemon, pear, white pepper and minerality. Very fresh on the palate, with a lively attack and lovely tension, and a volume characteristic of aging on the lees. Salivating finish.
100% Chardonnay from vines farmed organically, planted on clay soils. This cuvée was produced thanks to grapes bought from trusted growers. The grapes were harvested by hand and naturally vinified: direct pressing, light settling, then fermentation and aging in 500L demi-muids, without new oak, for nearly three years, with regular topping-up of the barrels (every two weeks). Bottled at the end of July 2025, without fining nor filtration, zero added sulfur.
