A cuvée produced from grapes purchased from winegrowers who share the same vision of viticulture and natural wine. This is a new blend for the 2023 vintage: Aligoté and Savagnin from organically grown vines, planted on clay marl soils and harvested by hand. Vinification: direct pressing, partial fermentation in vats, then bottled with residual sugars to create effervescence. Unfined, unfiltered, no added sulfites. Undisgorged. This is an extra-brut sparkling wine.

Jean-François Ganevat represents the 14th generation of vignerons of his family in Rotalier, in the south of Jura. After years working as the cellar master of Jean-Marc Morey in Chassagne-Montrachet, he took over his family’s estate in 1998.
