45% Carignan, 35% Mourvèdre, and 20% Grenache from organically farmed vines planted in the lieu-dit La Sourre, near the Étang de La Palme, between Perpignan and Narbonne. Manual harvest in small crates, only in the morning. Vinification: direct pressing of the Mourvèdre, into which whole bunches of Grenache and Carignan are macerated for 15 days. After pressing, fermentation finishes and the wine is aged for 18 months in 5th-use oak barrels on gross lees. Unfined, unfiltered, no added sulfites.
