Savagnin from organically grown vines, dried on the vine, therefore overripe, harvested by hand at Saint Noah's Day (Noah=Noé in French): the 10th of November. Vinification: direct pressing, aged in 400-liter demi-muids for 48 months, with topping up to avoid any hint of oxidation... Bottled on the 25th of November, with no added sulfites.

Tony Bornard is the son of the famous Jura figurehead Philippe Bornard , today retired. They are neighbours of the famous Pierre Overnoy, andhey reside in the oldest building in the village of Pupillin. Tony struck out on his own to quietly create his estate as well in 2013. He then took over the family estate from his father in 2017, merging it together with the estate he’d personally...
