100% Côt from organic vines over 70 years old, with vine shoots from three to seven meters long. Natural winemaking "the same way I've done it for 47 years": hand-picking in several passes to obtain perfect ripeness, "and then I keep it as simple as possible", pressing, several rackings to obtain a clear wine, two years of aging in barrels that have seen several wines. Unfined and unfiltered, with no added inputs or sulfites. After bottling, two years of maturation in bottles, in the cellars.

Claude Courtois is one of the pioneers of natural wine, having rediscovered more than 20 years ago in his native Sologne the path leading back to the “original” nature, which is why the French word Paradis appears in his estate’s name, "les cailloux du paradis", meaning “the stones of paradise”.
