A cuvée produced from grapes grown by Grégoire and Judicaëlle Perron, certified organic and Nature et Progrès: a blend of 30% Poulsard, 30% Gamay, 30% Mondeuse and 10% Pinot Noir. Harvesting was done by hand. Vinification: total de-stemming, very long maceration of the berries for 6 months, in qvevris, these large Georgian terracotta amphorae buried in the soil. Gentle pressing, a few months of ageing in vats before bottling at the estate in November 2024. Unfined and unfiltered, with no added sulfites.
