100% Sauvignon, from old, massal selection vines grown on a flinty clay soil. The parcel is surrounded by fruit trees, creating a beautiful ecosystem where wild grasses are allowed to grow freely. The vines are grown organically and cultivated with the least intervention possible; vine treatments are made from nettle, horsetail, flowers of sulphur and minute doses of Bordeaux mixture. Vinification: maceration, then maturation for 30 months in barrels, without new oak. Neither fined nor filtered, and without added sulphites.
