A blend of grape varieties, including Sauvignon, Menu Pineau, Romorantin and Chardonnay. The vines are cultivated organically with the least intervention possible; vine treatments are made from nettle, horsetail, flowers of sulphur and minute doses of Bordeaux mixture. Direct pressing, the grape varieties are fermenting together, 30 months of aging in barrels, no new oak. Neither fined nor filtered, and without added sulphites.
