Petrichor is the smell that comes from the earth when rain falls after a dry spell. Symbolically, this natural red sparkling wine (what a great idea!) quenches our thirst with notes of redcurrant, raspberry, and pepper... what a wonderful discovery!
70% Syrah and 30% Cinsault from organically grown vines, certified in their third year of conversion following the recent purchase of several plots. The grapes were harvested by hand in small crates, with controlled yields. Vinification: short 5-day maceration of the whole bunches, without any punching down or pumping over. Slow and gentle pressing to preserve the fruit. Bottled before the end of fermentation to create effervescence in the bottle. End of fermentation and 6 months of aging on laths. Unfined, unfiltered, no sulfur added.
