70% Syrah and 30% Cinsault from organically grown vines, certified in their third year of conversion following the recent purchase of several plots. The grapes were harvested by hand in small crates, with controlled yields. Vinification: short 5-day maceration of the whole bunches, without any punching down or pumping over. Slow and gentle pressing to preserve the fruit. Bottled before the end of fermentation to create effervescence in the bottle. End of fermentation and 6 months of aging on laths. Unfined, unfiltered, no sulfur added.

Marc Castan lives in Leucate in France’s Aude department. This future enfant terrible was born in Narbonne, where he grew up impassioned by both land and sea.
