100% Pineau Menu from young vines aged 8 to 10 years, organically grown and planted on sandy and clay soils. The entire estate is certified by ECOCERT and practices grass cover cropping. The grapes were harvested by hand, sorting of the grapes in the vineyards. Vinification: total destemming, the berries macerate for two months in amphorae, pressing, then one year of aging in amphorae. Bottled without fining or filtration, just a micro dose of sulfur.
