100% Macabeu from 50-year-old vines, farmed organically on parcels of micaschist, granite, and quartz. The grapes were harvested by hand and naturally vinified: slow and gentle pressing of the whole clusters over 10 hours. Transferred to barrels for fermentation and 4 months of aging in barrels that have seen several wines. Bottled unfined and unfiltered, with just a micro-dose of sulfiets at racking (1 g/hL).
