A blend of Grolleau, Gamay, and Côt, from 15-year-old vines cultivated organically and planted in clay-loam soils over a limestone subsoil. The grapes were harvested by hand, with yields of around 40 hl/ha. Natural winemaking: partial destemming of the berries, maceration with several punch-downs, without forcing the extraction. Gentle pressing in a pneumatic press to preserve the fruit. Fermentation and aging in fiberglass tanks. Bottled without fining or filtration, with no added sulfites.
