100% Chenin from 40-year-old vines, farmed organically and planted on cold clay soils with a limestone subsoil. Gentle, manual vineyard management. The grapes were harvested by hand, with yields of 30 hl/ha. Winemaking: direct pressing of the whole clusters in a pneumatic press; indigenous yeasts; 70% of the wine is aged in 228-liter barrels that have seenb other wines, and 30% in fiberglass tanks. Bottled at the Clos, without fining or filtration, and with no added sulfites.
