100% Chenin from old vines over 40 years of age, organically farmed and planted on light clay soils over flint. Gentle manual work throughout the vineyard. The grapes were harvested by hand, with yields of 21 hl/ha. Vinification: direct pressing of the whole bunches in a pneumatic press, indigenous yeasts, fermentation and ageing with 60% in egg-shaped concrete vats and 40% in 500-litre barrels. Bottled at the Clos, unfined and unfiltered, with no added sulphites.
