A sparkling wine made from a plot selection that is worth it: 100% Chenin from old vines over 40 years old, farmed organically and planted in light clay soils overlying flint. Gentle, manual vineyard management. The grapes were harvested by hand. Vinification: direct pressing of the whole clusters, indigenous yeasts, 3 months in vats, bottling, then 22 months of bottle aging on laths. Disgorged in July 2025, without fining or filtration, and with no added sulfites.
