Sylvain Pataille
Sylvain Pataille is the winemaker at the helm of his eponymous estate in Marsannay, Burgundy, and quite possibly the revelation of recent years in the sector. A native of the village, he studied at the Beaune wine school and graduated as an oenologist in Bordeaux. Sylvain started from scratch more than 25 years ago... With just 1 hectare in 1999, the estate now covers 17 hectares, almost entirely located around Marsannay, with its beautiful belt of outcropping limestone. The vines are cultivated organically and biodynamically. The work in the cellar is natural, but carried out with great precision. The quality of the juices produced is superb, and the work done on the Aligotés is nothing short of spectacular! Between his haircut, his purple labels, and his super reasonable prices in a region known for its unreasonableness, Sylvain is now indispensable in our cellars. Wines that every wine-lovers should absolutely try !
A sunny nose of citrus and stone fruits, flintstone and a hint of smoke... A luscious, vibrant wine with a warm minerality, length, and a lovely mouthfeel, topped off by a dried apricot finish.
Like a pear amandine tart, the nose boasts notes of orchard fruits, a touch of butter, a hint of hazelnut, plus a hint of lemon. Palate: a wine with a clean attack, creamy texture, beautiful volume, and a long finish.
Once again, a pure delight—powerful nose, concentrated and ever-evolving. On the palate: great volume with no heaviness, a very light reduction that perfectly structures the whole, with a long finish marked by nutty flavors, especially hazelnuts. Yum.
A nose of white flowers and citrus fruits, led by notes of acacia and lemon. A lively, dense palate that's briny, saline, and full of tension – a wine that's almost bristling with energy.
An evolving nose of white peach, pear, watermelon, with a hint of exotic fruits... On the palate: round, creamy, with the wood perfectly integrated. The whole is beautifully balanced, with a long finish. Two to four barrels produced per year.
Ohlalala, what a stunning tasting experience! Butter, hazelnut, white fruits, flowers… The palate is mineral, silky, velvety, and powerful, fully revealing the hazelnut notes. A truly memorable bottle. Decanting recommended.
An eminently mineral nose, opening with notes of chalk, followed by white truffle, honey, pear and candied lemon. Creamy, tense, and ultra smooth, with a long, salty finish. One of our great favourites, built like an "an old style Meursault", as Sylvain likes to say!
