The work Sylvain is doing with the Aligoté grape is astounding. Take this nose, redolent of candied citrus, pear, and honey, with a mineral backbone. The palate is mouthwatering, refreshing, delicate, yet very structured – "built like a Chenin", as Sylvain puts it. A perfect seafood pairing.

100% Aligoté, from old vines farmed biodynamically and planted in 1949 on a very beautiful plot of marl soils. Harvested by hand. Natural vinification without additives: whole bunches are pressed 5-6 hours in a vertical press, then transferred mid-fermentation into old 350-litre barrels for one year, followed by one year in vats. Bottled at the estate without fining or filtration, and just a microdose of sulphur.
