100% Aligoté, from vines pruned according to the gobelet method, farmed biodynamically and planted in equal parts in the 1930s, 50s and 60s. The grapes are harvested by hand at maturity (in Sylvain’s words, "Everyone talks about tension in wine, and I think that a ripe grape doesn’t prevent that – tension comes from somewhere else!”) Vinification: whole bunches are pressed 5-6 hours in a vertical press, then transferred mid-fermentation into old 350-litre barrels for one year, followed by one year in vats. Bottled with just a microdose of sulphur.

Sylvain Pataille is the winemaker at the helm of his eponymous estate in Marsannay, Burgundy, and quite possibly the revelation of recent years in the sector.
