100% golden Aligoté from organically farmed vines, planted in goblet training back in 1926 on a tiny 16-are parcel. A delicate vineyard, never trellised, only hand-braided by its former owner. No miracles here—yields hover around 15 hl/ha. Hand-harvested at full ripeness, whole clusters pressed directly in a vertical press, spontaneous fermentation starting in tanks before being racked into barrels mid-fermentation. Aged for one year in barrels, then eight months in tanks. Just a whisper of sulfur at bottling.
