A very original nose, slightly exotic, with roasted, buttery reduction... On the palate: balanced, generous, and fruity, with a saline finish. Superb!
100% Chardonnay from several parcels of Marsannay: Les Crais, Champ Salomon, Larrey. From 40-year-old vines, as well as the 6-year-old vines of Clos du Roy. Direct, manual pressing for 5-6 hours of whole bunches in a very old vertical press. Moved to barrels mid-fermentation, matured 24 months in barrels on its lees, with 15 % new oak, blended then matured an additional month in vats, with a light filtration at the end. Just a tiny pinch of sulphur added at bottling.
