100% Chardonnay from several parcels of Marsannay: Les Crais, Champ Salomon, Larrey. From 40-year-old vines, as well as the 6-year-old vines of Clos du Roy. Direct, manual pressing for 5-6 hours of whole bunches in a very old vertical press. Moved to barrels mid-fermentation, matured 24 months in barrels on its lees, with 15 % new oak, blended then matured an additional month in vats, with a light filtration at the end. Just a tiny pinch of sulphur added at bottling.
Sylvain Pataille
Sylvain Pataille is the winemaker at the helm of his eponymous estate in Marsannay, Burgundy, and quite possibly the revelation of recent years in the sector. A native of the village, he studied at the Beaune wine school and graduated as an oenologist in Bordeaux. Sylvain started from scratch more than 25 years ago...
