100% Pinot Noir, from 40-year-old vines, cultivated biodynamically and planted at the entrance to the village of Marsannay on a very fine terroir with outcropping bedrock, facing east. The grapes are harvested by hand. Vinification: after 50% of the bunches are destemmed, the grapes macerate 3 weeks with pumping over and punching down of the cap, followed by gentle pressing in an old vertical press, and 15 months of maturation in barrels of which 10% are new oak. Bottled at the estate without fining or filtration, and just a microdose of sulphur.
