A cuvée of Pinot Noir from the Estate's oldest vines, 60-80 year-old vines grown organically and planted on the parcels of Clos du Roy, En Clémengeot and Les Ouzeloy. The grapes are harvested by hand of course, and the yields are very low, around 20 hecto/hectare. Vinification: 50% whole bunches in vats, slow and gentle pressing, 24 months of maturation on fine lees in barrels with 30% new oak. Bottled at the Estate, with just a micro-dose of sulphur.
Sylvain Pataille
Sylvain Pataille is the winemaker at the helm of his eponymous estate in Marsannay, Burgundy, and quite possibly the revelation of recent years in the sector. A native of the village, he studied at the Beaune wine school and graduated as an oenologist in Bordeaux. Sylvain started from scratch more than 25 years ago...
