100% Pinot Noir from 40-90-year old vines, planted on the Chapitre parcel just outside of Dijon. Grown on hillsides with a limestone bedrock and gravel on the surface. A parcel that enjoys a solid reputation, and is also a source of fascination for fellow Burgundian Jean-Yves Bizot (of Vosne-Romanée fame). 3 weeks of maceration in whole bunches. Matured 20 months in 3-10 year-old barrels, blended then matured an additional 3 months in vats, with a light filtration at the end. Just a tiny pinch of sulphur added at bottling.
