100% Pinot Noir from a superb parcel, Les Longeroies, with a limestone bedrock, brown rocks on the surface, and 15-60-year-old vines. A parcel that is still in the running to be reclassified as a premier cru. Manual harvest and natural vinification: 80% whole bunches, 20% destemmed, three weeks of maceration in vats, without additives. Matured for 18 months in 3-10 year-old barrels, blended then matured an additional month in vats, with a light filtration at the end. Bottled at the Estate with one gram of sulphur.
Sylvain Pataille
Sylvain Pataille is the winemaker at the helm of his eponymous estate in Marsannay, Burgundy, and quite possibly the revelation of recent years in the sector. A native of the village, he studied at the Beaune wine school and graduated as an oenologist in Bordeaux. Sylvain started from scratch more than 25 years ago...
