Champagne Brut Nature - Vincent Assailly
Champagne Assailly

100% Chardonnay from 40-year-old vines on average, planted in Avize, Cramant and Oger — all Grand Cru parcels. Hand-harvested, direct pressing, fermentation and vinification in stainless steel tanks, then aged 70% in concrete vats and 30% in barrels for 8 to 14 months. A blend of the 2017, 2018, 2019 and 2020 vintages. Bottled for the second fermentation and aged on laths in the Domaine’s cellars. This is a zero-dosage Champagne, disgorged on the 23rd of April 2021.
