75% Pinot Meunier and 25% Pinot Noir, from two perpetual cuvées spanning 2003 to 2023, each refreshed annually by 50% — one with white wines, the other with reds. The red wine component comes from a single Meunier parcel, with a long pre-fermentation maceration and ageing in old barrels. Vines planted on green clays over chalky marls. Aging on lees, tirage, then maturation on laths until disgorgement on 9th April 2025. This is an extra-brut with a dosage of 2.5 gr/l. Just a whisper of sulfur (11 mg/l total), a mined sulfur handcrafted by Cédric.
